BELLISSIMA! Pizza Napoletana - Sun Dried Tomatoes and Olive (Vegetarian)

Bellissima Napoletana is one of those full of taste pizzas that requires virtually no preparation time to prepare.

Preheat the oven at 200-250C

Use:

1 pizza base 10"

85g tomato sauce (= 1/4 cup = 5 tablespoons)

85gr of diced mozzarella cheese (=2/3 cup)

40gr sundried tomatoes

30gr mixed olives

Pinch of dry oregano

Start preparing your pizza base leaving it breath for a couple of minutes. Spread the tomato sauce on the pizza base with a spoon, add the mozzarella cheese. Scatter the sun-dried tomatoes and the mixed olives evenly over the pizza base. Finishing off your pizza with a drizzle of oil.

Place the pizza on a tray and cook it in the oven for 5 to 8 minutes depending on your taste.

Before serving add a pinch of dry oregano all over the top.

Sun-dried tomatoes are a food of the Sicilian tradition and in particular of the city of Pachino. They greatly increase the excellent nutritional properties of fresh tomatoes giving that extra touch to your pizza. They are rich in vitamin C and lycopene (good for Osteoporosis), two important antioxidants for the skin and for the health of the body in general.

To sundry tomatoes, blanch them and remove the skin. Cut them in half and squeeze out the pulp and seeds, then place the tomatoes in a single layer on a rack in full sun. Make sure there are a couple of inches of airflow under the rack. Turn the tomatoes every day and bring the rack indoors at night
